Curried Egg Salad

Sounds nasty. Tastes good. A few years ago I waw watching Martha Stewart on TV. She said she was going to make curried egg salad. "That is disgusting." I thought to myself. By the time she was done making it, it actually looked kind of yummy. I have been making it since.
Here is my paleo version.

4 hard boiled eggs, cooled&chopped 3 stalks celery, chopped
1/4 cup diced onion
1/2 tsp curry powder
1 or 2 scallions, chopped
4 tsp paleo mayo
kosher salt and black pepper

Mix it all up and season with salt & pepper. I like to eat it over a big bed of mesculen mix. (You will have leftovers.)

By a few years ago i think she means a decade.... We ate it everyday when I was waiting to have Lilyanna... I'm not sure how I feel about having it agian...
